Today I was inspired by the post at WellTellMe about apples to make an apple puffed pancake in the oven this morning. We are using apples we purchased last week.
On our camping trip to Roan Mountain State Park last week, we came across a fruit stand just across the TN-NC border selling apples lower than sale price back home. I bought 26+ lbs of apples. All the ones we tasted so far have been great!
Here is the recipe I used with my variations in italics:
Apple Puffed Pancakes
6 large eggs
1 1/2 cups milk (I ran out of regular milk, so used 1 12oz can of evaporated milk.)
1 tsp vanilla
1 cup flour (I used hard white whole wheat flour)
2 Tbs sugar (I use stevia or xylitol) (I used sucanat and added it with the liquids.)
1/2 tsp salt
1/2 tsp cinnamon
pinch of nutmeg
1/2 cup butter (I used only 1/4 cup instead of 1/2.)
4 apples peeled, cored, quartered and thinly sliced (I used only 3, because my apples were very large.)
1 Tbs light brown sugar (I used sucanat that I ground in a small processor so it wouldn't be too gritty.)
confectioners suger -- optional (Didn't use any. Tasted sweet enough without it.)

-- Put the butter in a 9x13 glass baking dish and put it in the oven until the butter just melts. Take it out of the oven and put the apple slices in a single layer in the dish, then put it back in the oven and cook it until the butter starts to bubble (about 3-4 min).
-- Pour the batter over the apples, sprinkle the top with the brown sugar and bake the whole thing about 20 minutes (it should be puffed and golden). If you want, sprinkle it with the powdered sugar.
It was good! C had a few pieces and E said it was the best pie. I had to explain to her that it wasn't a pie. Half of it is gone already. I hope that the leftovers will heat up well for a later meal.
